How to taste it?
A classic? Its aromas of black berries, fresh nuts and subtle notes of undergrowth go just as well with creamy and fresh cheeses or foie gras brioche toasts as with a gourmet dessert. Ratafia is also excellent in cooking to deglaze meat or in sauce.
Rémanence can also be enjoyed in a cocktail, bringing a certain sweetness and a pleasant tangy touch to your creation.
Serve it chilled between 6°C and 13°C to fully appreciate its aromatic richness.
A product of the Champagne region
Nestled in the heart of the Pierry vineyards, on the Coteaux Sud d’Épernay, the Bonvalet house pays tribute to centuries of Champagne expertise with Rémanence. This ratafia draws its character from an exceptional terroir, where chalk-rich soils and an ideal climate give rise to grapes of incomparable quality.
By choosing Rémanence, you are participating in a human and local adventure. Each bottle tells the story of a region and a know-how passed down from generation to generation. It is much more than a spirit: it is a celebration of Champagne, its vines and its artisans.

manufacturing secret
At the heart of the Rémanence manufacturing process lies a deep respect for the terroir and traditions. Ratafia is made from unfermented grape juice, combined with a wine brandy obtained through the distillation and recovery of agricultural residues from the Champagne vineyards. This process respects the environment while enhancing the quality of the final product.
The grapes come from the Côteaux-Sud d’Épernay, a unique terroir renowned for the quality of its Pinot Noir, the only grape variety that makes up Rémanence.
Finally, to create this exceptional product, each step, from distillation to blending, is carried out with care to create a perfect harmony between the natural sweetness of the fresh grape must and the complex and elegant notes of the wine brandy.
