Our new product? An alcohol straight from Japan, distilled in Champagne and which will delight your taste buds. Whether you like it cold, warm or in a cocktail, Shōchū can be enjoyed in several ways and reveal different aromas but always with notes of nuts, pear and sour candy.
Shōchū is an alcohol that can be enjoyed in 5 different ways: pure or on the rocks, mixed with cold water (Mizuwari) or mixed with hot water (Oyuwari) or in a cocktail.
When French terroir pays homage to the land of the rising sun
Shōchū is a traditional Japanese brandy made from the distillation of ayany rice lees used in the production of sake wine.
The rice lees used in the production of Révérence come from Camargue rice and were used in the production of sake by a famous Japanese brewery located in France not far from Paris.
By blending the heritage of Japanese Shōchū with the excellence of French ingredients and techniques, Révérence pays homage to tradition through innovation.

After sake production, a semi-solid material remains, the fermented rice lees. These are thrown away and not used. The revaluation of raw materials destined for destruction is at the very heart of the DNA of Distillerie Bonvalet.
True to its quest for excellence and quality, the latter has therefore sourced Kasu-type rice sake lees directly from the French region of Camargue, renowned for its rice fields.
The lees are kept in solid form at a very low temperature (-20C). They are then diluted in the heating body of the still. The state-of-the-art still of the Bonvalet Distillery allows for slow and gradual heating, essential for obtaining a Shōchū with subtle and preserved aromas. The rectification column plays a very important role because it will purify the distillate while preserving and intensifying its exceptional aromas. Finally, the alcohol will titrate between 67% vol. to 75% vol., and will be cooled between 0 and 3 degrees for 1 week to stabilize its aromatic profile and reduced to gradually bring it to a titration of around 30% vol. This slow and gradual process guarantees high quality and pronounced flavors.

Shōchū tonic
Ingredients
4cl of Shōchū Revérence, 12cl of Tonic Hypnose lemon, 1 grapefruit segment and 1 mint leaf.
Instructions
In a highball glass, pour 4cl of Shōchū.
Fill the glass with ice cubes to the top and top up with a Hypnose tonic.
Then decorate with a grapefruit wedge and a mint leaf.
