    Rémanence represents the alchemy of the elegance of a carefully distilled wine eau-de-vie and the aroma of fresh and expressive musts. Ratafia Bonvalet was made with Pinot Noir only. The remanence of the expression of this grape variety so emblematic of Champagne in all its splendor! Thus Rémanence presents a great aromatic richness. We find aromas of black berries typical of Pinot Noir and subtle notes of fresh nuts.

    Its aging in Meursault barrels gives it very particular notes of undergrowth and enlivens its color with warm tones of amber and copper.

We recommend enjoying it as an aperitif or at the end of a meal.

A local collaboration

Distillerie Bonvalet & L’Assiette Champenoise are proud to present their new collaboration in a limited and numbered edition!

The head bartender of the three-Michelin-starred restaurant, Matthieu Pavot, and Guillaume met in April 2023 and discovered two common passions: spirits and showcasing the Champagne region.

They then decided to develop together an Organic Champagne Wine Eau-de-Vie, created specifically for the Assiette Champenoise.
