The head bartender of the three-Michelin-starred restaurant, Matthieu Pavot, and Guillaume met in April 2023 and discovered two common passions: spirits and showcasing the Champagne region.
They then decided to develop together an Organic Champagne Wine Eau-de-Vie, created specifically for the Assiette Champenoise.
